The Arizona Pioneers' Home is a continuing care retirement home operated and funded by the State of Arizona. The Home provides care and services to residents living independently, as well as, those requiring personal, assisted living and intermediate care. APH was opened in 1911, for our Arizona pioneers and disabled miners to deliver the optimal physical, emotional and spiritual care in a historic home like environment. Job Summary:

Works under general supervision of a higher level cook or food service supervisor. Has the authority to exercise limited flexibility in choosing methods and procedures to complete assignments. Performs a variety of cooking and general food preparation activities; prepares special diet food; assists in keeping kitchen or cafeteria areas clean; safe, proper food storage; may serve in a lead capacity.

Work product consists of food prepared according to menu and standardized recipes; utensils, equipment and food service areas cleaned according to established procedures; preparation work for next day completed; food ready for delivery to serving areas.

Job Duties:

•Prepare menu items following recipe instructions and adjusting for number of portions; adjust for therapeutic diets; prepare in time to meet serving schedules

•Prepare food into individual portions for serving on food carts to infirmaries, observing requirements of special diets according to doctor's orders

•Clean kitchen area thoroughly for preparation of next meal's food, following standards of sanitation set by Department of Health Services; make cleaning assignments to other food service employees as necessary

•Assume duties of ordering food needed; approving all leave requests; submitting payroll information and directing all work in Food Service Department as needed

•Prepare food on individual plates for serving in dining room, observing requirements of special diets according to doctor's orders

•Ensures proper storage temperatures, dating, rotation of food stuff. Maintains safe, appropriate temperatures on food line

•Supervise other employees and direct work assignments when Food Service Manager or Supervisor is absent

•Other duties as assigned as related to the position

Knowledge, Skills & Abilities (KSAs):

Knowledge:

•Commercial sanitary methods used in food preparation and precautions needed to guard against food hazards in food service activities and standards set by County Health Department

•Recipe terminology, techniques used to preserve natural nutrients and palatability of product and adjustment for required number of servings

•Variety of foods, their preparation and serving in commercial size quantities and practices of institutional food service; use of various proper temperature ranges for thawing, cooking and storage of all food substances

•Principles of supervision and work activity of entire food service staff, policies and procedures for the work unit

•Sanitation and safety codes, rules and regulations, cleaning methods and techniques

•Purchase orders and procedures and basic arithmetic computation methods

•All kitchen equipment proper use, safety, cleaning and storage

•Therapeutic diet requirements and preparation

Skills:

•Preparing various foods for consumption that is nutritional and palatable with minimal waste while maintaining optimum freshness and visual presentation

•Interpersonal communication on all levels of interaction to provide positive outcomes and maintain good working relationships

•Use of all cooking equipment including steamers, ovens and walk-ins

Ability:

•Establish and maintain positive work relationships, motivate and supervise subordinates and maintain quality and quantity in production

•Work well, within a team environment, with persons of different ethnic, religious, cultural and cognitive backgrounds

•Communicate verbally and in writing in the English language

•Present food in an attractive manner

Licenses / Certificates:

•Must undergo annual screening for TB with negative results

•Valid AZ Class 1 Fingerprint card

•Valid Food Handler's Permit

Pre-Employment Requirements:

•Serve-Safe or similar training

•Valid drivers license
