Job Summary:

The Cook 3 position is responsible for preparing and cooking food for the Veterans/Members of the Arizona State Veteran Home and supervises lower level cooks and food service workers. The Cook 3 consults with Dietary Services Manager or dietitian regarding kitchen or menu problems, complies with all federal, state and VA regulations and department policies and procedures that impact job function. As the Cook 3 you will incorporate culture change in the form of Veteran/Member-centered care in the performance of job duties.

Job Duties:
  • Coordinates food service production to include meeting the special dietary requirements of Veterans/Members according to the menu and provider orders.
  • Instructs subordinates in the proper methods and techniques of food preparation, cooking and serving and in observance of modern sanitary conditions in all phases of food handling.
  • Ensures compliance with all regulations, policies and procedures that impact job functions.
  • Attends and participates in staff meetings and in-service training. Incorporates culture change in the form of Veteran/Member-centered care in the performance of job duties.
  • Prepares reports and data collection (e.g., cleaning and temperature log} as assigned by the Dietary Services Manager.
  • Prepares foods to be cooked.
  • Cuts meat, washes and cuts vegetables.
  • Prepares salads, desserts, sandwiches, breads and pastry.
  • Operates standard cooking and food preparation equipment.
  • Maintains and enforces equipment safeguards to prevent injury or loss of facility equipment, supplies and food.
  • Cooks a variety of foods following standardized recipes and methods of preparation in the quantities outlined in the production guide.
  • Coordinates preparation and cooking of foods that are included on the menu so the entire meal is ready for service at the same time and the correct temperatures are maintained for hot and cold foods.
  • Washes dishes and utensils.
  • Cleans and sanitizes work tables, refrigerators and kitchen equipment.
  • Washes pots, pans and trays by hand.
  • Receives requested food deliveries and checks against food order for inventory control.
Knowledge, Skills & Abilities (KSAs):

Knowledge of:

  • Rules, regulations, policies procedures of section and work unit
  • Preparation of food and cooking techniques
  • Health hazards in food preparation and storage
  • Safety and sanitation rules
  • Kitchen are cleaning procedures
  • Proper temperature ranges for thawing, cooking and storage of food

Skill in:

  • Interpersonal communication; verbal and written communication
  • Customer services
  • Using and operating cooking equipment
  • Presenting food in an attractive manner
  • Preparing nutritious, palatable meals with minimal waste

Ability to:

  • Perform some simple cooking procedures
  • Complete simple logs/reports

Pre-Employment Requirements:
  • Current Negative Tb skin test (Mantoux skin test) with in the last 6 months or a written statement form a physician, physician’s assistant or a registered nurse practitioner indication freedom from tuberculosis, if in the past has had a positive skin test or tuberculosis
  • Current food handlers permit
  • Requires the ability to obtain and retain a valid AZ DPS Level One Fingerprint Clearance Card
